Posh Beans & Plantain

When your man  family begs you to make beans and plaintain. Why dont you surprise them and make this version, awaaaaay from the regular palmoil dish.


Ingredients:
1. Firm Ripe Plantains-2 large fingers
2. Vegetable oil-Enough for deep frying
3. Carrots-3 medium sticks
4. Scallions(Spring Onions)-6
5. Green peppers-1 huge bell
4. Habaneros/Cameron Pepper-4 bells or more grinded
5. Onions- 1 huge bulb diced
6. Soft Chicken-4 pieces
7. Salt-To taste
8. Maggi Chicken Cubes-2 cubes
9. Mixed herbs (Optional)
10. Green Peas-4 cooking spoons

How To:
1. Place chicken into a medium size pot and crush 2 cubes of Maggi on it. Add a sprinkle of chopped onions, the peas and the Cameron pepper paste. Add half a cup of water and set to boil. Allow to cook till done.

2. Add the carrots, green pepper, mixed herbs some more water and the scallions to the boiling pot. Add a cooking spoon of vegetable oil to the mix. Stir and cover. Allow to cook for 7 minutes.

3. Slice the plantain and salt it slightly. Deep fry the slices in hot oil till golden yellow or brown.

And that's your Posh Beans & Plantain by Yours truly!!!
